So as I picked up my daughter from school the other day; I was notified that I needed to make something for tomorrows bake sale. (super!) Not that I don't enjoy making sweet treats for everyone to enjoy. I was having one of those days. The DH was on a golfing trip for the next few days, my son was sleeping in his car seat ( I hated to wake him), my pantry I knew from memory was low on options. Luckily when I got home had some cake mix and just enough sour cream and powdered sugar. I ended up making Chocolate Sour Cream cupcakes. In some of them I put fake Oreo cookies in the bottom of the cupcake lining as a bonus. My frosting was made from pure butter, sugar and unsweetened cocoa. So I stayed up until 1:30 a.m. frosting these babies. My daughter couldn't wait to get her little fingers around these. (She is the ultimate "chocoholic")
As for me, I tried not licking the frosting bowl clean before I went to bed. There is just something about frosting from scratch. The things I will do for my kids.I must make a note to myself to buy one of those cupcake carriers; I'm sure this won't be the last time I'll be making something for a bake sale.
